- 2 boneless, skinless chicken breasts (or 4 chicken thighs)
- 1 cup white or brown rice
- 1 tablespoon olive oil
- 1 cup chicken broth
- ½ cup heavy cream
- ¼ cup Parmesan cheese
- Garlic powder, paprika, salt, black pepper, Italian seasoning
- Fresh parsley for garnish
Instructions
- Cook the rice in a medium saucepan according to package instructions. Set aside.
- Season chicken with garlic powder, paprika, salt, and pepper. In a large skillet over medium-high heat, sear chicken in olive oil and butter for about 4–5 minutes per side until golden brown. Remove from pan.
- In the same skillet, sauté onions in butter until softened. Add minced garlic and cook briefly before adding chicken broth. Stir in cream, Parmesan cheese, Italian seasoning, salt, and pepper; let simmer until thickened.
- Return chicken to the skillet and spoon sauce over it. Cover and simmer for 5–7 minutes until fully cooked.
- Serve over cooked rice and garnish with fresh parsley.
