Ingredients
- 3 pounds beef chuck roast
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion
- 4 garlic cloves
- 1 can diced tomatoes (14.5 oz)
- 2 cups beef broth
- 2 tablespoons apple cider vinegar
- Corn tortillas
Instructions
- Soak the dried chilies in hot water for 15 minutes until softened. Drain and blend with onion, garlic, and diced tomatoes until smooth.
