  • 1/2 cup salted butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream, room temperature
  • 1 1/2 tbsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 large eggs, room temperature
  • 2 large apples, chopped
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/8 tsp ground nutmeg
  • sprinkle of lemon juice
  • 1/2 cup caramel sauce
  • 1/2 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and ground cinnamon in a bowl, then mix in melted butter. Press into the bottom of a baking dish.
  2. In another bowl, beat cream cheese until smooth. Add sugar and flour, mix well, then blend in sour cream, vanilla, and cinnamon. Incorporate eggs one at a time.
  3. Pour the cheesecake filling over the crust and bake for about 50 minutes until set around the edges.
  4. While cooling, prepare the topping by sautéing chopped apples with brown sugar, cinnamon, nutmeg, and lemon juice until tender.
  5. Once cooled, spread caramel sauce over the cheesecake and top with cooked apple mixture before serving.
