Ingredients
- 5 pieces of bacon
- 1 lb ground beef
- 1/4 cup butter
- 1 cup heavy cream
- 2 cups sharp cheddar cheese (shredded)
- 1/4 cup onion (diced)
- 2 sticks celery (diced)
- 1/2 teaspoon minced garlic
- 1 lb Yukon potatoes (peeled & diced small)
- 4 cups chicken broth
- 6 tablespoons flour
- Salt & pepper to taste
Instructions
- Cook the bacon in a large soup pot over medium-high heat until crispy. Transfer to paper towels, leaving the fat in the pot.
- Brown the ground beef in the same pot, breaking it apart until cooked through. Drain excess fat.
- Sauté diced onion and celery in melted butter until softened.
- Stir in minced garlic and flour; cook for about 2 minutes.
- Gradually add chicken broth, whisking until smooth.
- Mix in heavy cream, Worcestershire sauce, diced potatoes, and return cooked beef to the pot.
- Bring to a boil; then reduce heat and simmer for about 15 minutes until potatoes are tender.
- Remove from heat; stir in cheddar cheese until melted and creamy.
