  • 3 cups cooked and shredded chicken
  • 8 oz evaporated milk (or half-and-half)
  • 1 can cream of chicken soup (10.5 oz)
  • 40 oz chicken broth
  • 1 can buttermilk biscuits (16.3 oz)
  • 1/4 cup all-purpose flour

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add diced onion, celery, carrots, and garlic; sauté until tender (6-8 minutes).
  2. Stir in shredded chicken, chicken broth, evaporated milk, and cream of chicken soup. Season with salt and pepper; bring to a simmer.
  3. Cut each biscuit into quarters and toss in flour to prevent sticking.
  4. Add biscuit pieces to the simmering soup, pressing them under the broth gently. Cover and cook for about 8-10 minutes until dumplings are cooked through.
