  • 1 kg fresh Roma tomatoes (quartered)
  • 1 large onion (diced)
  • 3 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 litre chicken or vegetable broth
  • 240 ml heavy cream (optional)
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Arrange quartered tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss gently.
  3. Roast tomatoes for 25-30 minutes until tender and slightly caramelized.
  4. In a large pot over medium heat, sauté diced onion in olive oil until translucent (about 5-7 minutes). Add minced garlic; cook for another minute.
  5. Combine roasted tomatoes with sautéed onions and garlic in the pot. Add broth and smoked paprika; stir well.
  6. Blend soup until smooth using an immersion blender (or regular blender).
  7. For creamier soup, stir in heavy cream before serving. Heat through but do not boil.
  8. Serve warm, garnished with fresh basil.
