Ingredients
- 1 kg fresh Roma tomatoes (quartered)
- 1 large onion (diced)
- 3 garlic cloves (minced)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 litre chicken or vegetable broth
- 240 ml heavy cream (optional)
- Salt and pepper to taste
- Fresh basil leaves (for garnish)
Instructions
- Preheat the oven to 200°C (400°F).
- Arrange quartered tomatoes on a baking sheet, drizzle with olive oil, season with salt and pepper, and toss gently.
- Roast tomatoes for 25-30 minutes until tender and slightly caramelized.
- In a large pot over medium heat, sauté diced onion in olive oil until translucent (about 5-7 minutes). Add minced garlic; cook for another minute.
- Combine roasted tomatoes with sautéed onions and garlic in the pot. Add broth and smoked paprika; stir well.
- Blend soup until smooth using an immersion blender (or regular blender).
- For creamier soup, stir in heavy cream before serving. Heat through but do not boil.
