  • 3 tablespoons olive oil
  • 1 large onion (cut into 8 pieces)
  • 12 cloves garlic (halved)
  • 1 tablespoon kosher salt
  • 1 tablespoon oregano
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth
  • ⅓ cup heavy cream
  • ⅔ cup fresh basil (plus more for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss Campari tomatoes, onion pieces, and halved garlic with olive oil, kosher salt, oregano, and smoked paprika.
  3. Roast for about 25–30 minutes until the tomatoes are soft and slightly charred.
  4. Transfer vegetables to a large pot and add vegetable broth. Use an immersion blender to puree until smooth.
  5. Stir in heavy cream and chopped fresh basil; heat gently over low until warmed through.
  6. Serve hot with extra basil leaves and cream if desired.
