- 2 servings dry instant ramen noodle cakes (about 140 g)
- 10 oz extra firm tofu or vegetables/mushrooms (sliced)
- 1 cup water or vegetable broth
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 2–3 tbsp sugar (or other sweetener)
- 2 tbsp rice vinegar (or lemon juice)
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- Optional: minced garlic, chopped scallions, sesame seeds for garnish
Instructions
- Mix all sauce ingredients in a bowl until well combined; set aside.
- Boil water in a pot and cook noodles for about 2-3 minutes less than package instructions.
- Drain noodles and rinse under cold water if desired.
- In a non-stick pan, sauté selected veggies/tofu until cooked.
- Pour the prepared sauce over sautéed ingredients and simmer for 2-3 minutes until thickened.
- Add noodles to the pan and mix well to coat them in the sauce.
- Cook together for another 3 minutes until heated through and absorbed.
- Adjust seasoning as needed and serve garnished with scallions and sesame seeds.
