Ingredients

  • 2 servings dry instant ramen noodle cakes (about 140 g)
  • 10 oz extra firm tofu or vegetables/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 23 tbsp sugar (or other sweetener)
  • 2 tbsp rice vinegar (or lemon juice)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • Optional: minced garlic, chopped scallions, sesame seeds for garnish

Instructions

  1. Mix all sauce ingredients in a bowl until well combined; set aside.
  2. Boil water in a pot and cook noodles for about 2-3 minutes less than package instructions.
  3. Drain noodles and rinse under cold water if desired.
  4. In a non-stick pan, sauté selected veggies/tofu until cooked.
  5. Pour the prepared sauce over sautéed ingredients and simmer for 2-3 minutes until thickened.
  6. Add noodles to the pan and mix well to coat them in the sauce.
  7. Cook together for another 3 minutes until heated through and absorbed.
  8. Adjust seasoning as needed and serve garnished with scallions and sesame seeds.
