Ingredients

  • 2 tbsp olive oil
  • 1 white onion, diced
  • 2 medium-large carrots, diced
  • 2 cloves of garlic, minced
  • 250 g dried red lentils
  • 1 tin of chopped tomatoes
  • 23 large baking potatoes, peeled and sliced thinly
  • 1 vegetable stock cube + 400 ml water
  • 1 tbsp tomato puree
  • 1 tbsp tamari sauce
  • 2 bay leaves
  • 1 tsp mixed herbs
  • 1 tsp rosemary
  • 1 tsp oregano
  • salt and pepper

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and carrots for 4–5 minutes until softened.
  3. Add the minced garlic and cook for another 1–2 minutes before stirring in corn flour.
  4. Mix in the herbs, tomato puree, tamari sauce, red lentils, chopped tomatoes, and half the vegetable stock. Bring to a boil then simmer for about 15 minutes.
  5. Meanwhile, slice the potatoes thinly.
  6. Transfer the lentil mixture to a baking dish or leave it in the skillet.
  7. Layer the sliced potatoes on top without gaps. Drizzle with olive oil and season with black pepper before covering with foil.
  8. Bake covered for 30 minutes; then remove foil and bake for an additional 20 minutes until crispy.
