Ingredients
- 2 tbsp olive oil
- 1 white onion, diced
- 2 medium-large carrots, diced
- 2 cloves of garlic, minced
- 250 g dried red lentils
- 1 tin of chopped tomatoes
- 2–3 large baking potatoes, peeled and sliced thinly
- 1 vegetable stock cube + 400 ml water
- 1 tbsp tomato puree
- 1 tbsp tamari sauce
- 2 bay leaves
- 1 tsp mixed herbs
- 1 tsp rosemary
- 1 tsp oregano
- salt and pepper
Instructions
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and carrots for 4–5 minutes until softened.
- Add the minced garlic and cook for another 1–2 minutes before stirring in corn flour.
- Mix in the herbs, tomato puree, tamari sauce, red lentils, chopped tomatoes, and half the vegetable stock. Bring to a boil then simmer for about 15 minutes.
- Meanwhile, slice the potatoes thinly.
- Transfer the lentil mixture to a baking dish or leave it in the skillet.
- Layer the sliced potatoes on top without gaps. Drizzle with olive oil and season with black pepper before covering with foil.
- Bake covered for 30 minutes; then remove foil and bake for an additional 20 minutes until crispy.
