- 4 cups vegetable stock
- 1 large yellow potato, peeled and grated
- 1 bay leaf
- ½ teaspoon thyme, dried
- 1 19-ounce can white beans, drained and rinsed
- 10–12 ounces spinach, chopped, tough stems removed
- 1 tablespoon fresh Italian parsley, minced
- 1 tablespoon freshly squeezed lemon juice
- 1–2 tablespoons grated Pecorino Romano or Parmigiano Reggiano cheese (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large stockpot over medium heat.
- Sauté diced onion and sliced celery for about 5 minutes until the onion becomes translucent.
- Stir in minced garlic and cook for an additional minute.
- Add vegetable stock, grated potato, bay leaf, and thyme; mix well.
