- 3 ounces red gelatin powder (Cherry or Strawberry)
- 3 ounces blue gelatin powder (Berry)
- 1 cup butter (room temperature, for frosting)
- 5 cups confectioners' sugar
- 1–2 tablespoons milk (for frosting)
- Red and blue icing gel or food coloring
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk together flour, baking powder, and salt. Alternate adding dry ingredients and milk to the mixture until just combined.
- Divide batter into three bowls; color one red and another blue using gelatin powders.
- Layer batters into cupcake liners: white first, followed by red, then blue.
- Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
- Beat together frosting ingredients until fluffy; decorate cooled cupcakes with frosting and icing gel.
