- 1/2 cup granulated sugar
- 1 cup (2 sticks) unsalted butter, cold & cubed
- 1/4 cup cold water
- 1 large egg
- 1 tablespoon water
- 1 tablespoon granulated sugar
Instructions
- Prepare the filling: In a saucepan over medium heat, combine cherries, lemon juice, vanilla, sugar, cornstarch, and salt. Simmer until thickened (about 10 minutes), then cool.
- Preheat your oven to 425°F (220°C) and prepare your pie plate by buttering it.
- Make the dough: Mix flour and sugar in a bowl. Cut in cold butter until crumbly. Add cold water and combine to form two balls of dough.
- Chill the dough for at least 30 minutes.
- Roll out each dough ball into discs larger than your pie plate.
