  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch

  • 2 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup (2 sticks) unsalted butter, cold & cubed
  • 1/4 cup cold water
  • 1 large egg
  • 1 tablespoon water
  • 1 tablespoon granulated sugar

Instructions

  1. Prepare the filling: In a saucepan over medium heat, combine cherries, lemon juice, vanilla, sugar, cornstarch, and salt. Simmer until thickened (about 10 minutes), then cool.
  2. Preheat your oven to 425°F (220°C) and prepare your pie plate by buttering it.
  3. Make the dough: Mix flour and sugar in a bowl. Cut in cold butter until crumbly. Add cold water and combine to form two balls of dough.
  4. Chill the dough for at least 30 minutes.
  5. Roll out each dough ball into discs larger than your pie plate.
  6. Assemble: Place one disc in the pie plate, fill with cherry mixture, and cover with the second disc. Trim edges and create steam vents.
  7. Brush with egg wash and sprinkle sugar on top before baking for about 30 minutes until golden brown.
