Ingredients
- 500g bread flour
- 350ml water (room temperature)
- 100g active sourdough starter
- 10g salt
- 1 cup fresh blueberries
- 1/3 cup cream cheese (softened)
- Zest of 1 lemon
- 2 tablespoons granulated sugar
- 2 tablespoons honey (for glaze)
- 1 tablespoon fresh lemon juice (for glaze)
Instructions
- In a mixing bowl, combine bread flour, water, and active sourdough starter. Allow to rest for 30 minutes.
- Add salt to the dough and knead until well mixed. Cover and let rise for 4-6 hours, performing stretch and folds every 30 minutes.
- In another bowl, mix cream cheese, lemon zest, and sugar until smooth; set aside.
- During the final stretch-and-fold, gently incorporate blueberries into the dough.
- Shape the dough into a rectangle on a clean surface, spread cream cheese mixture on top, then roll it up tightly.
- Place seam-side up in a banneton and refrigerate overnight for 8-12 hours.
- Preheat your oven with a Dutch oven at 250°C (482°F). Bake dough with lid on for 20 minutes; reduce heat to 220°C (428°F) and bake without lid for an additional 20-25 minutes until golden brown.
- Brush warm loaf with honey-lemon glaze after baking; let it cool before slicing.
