  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. Preheat the oven to 350°F (177°C). In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
  2. In a large bowl, beat softened butter and sugar until creamy. Mix in the egg and vanilla extract. Gradually add dry ingredients until combined.
  3. Refrigerate the dough for at least 20 minutes. Press onto a greased pizza pan into a circle about 9–10 inches wide.
  4. Bake for 17–19 minutes until lightly browned; cool completely.
  5. For the frosting, beat cream cheese and butter until smooth; mix in confectioners’ sugar and vanilla.
  6. Spread frosting over the cooled crust and top with fresh fruit.
