  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. Melt the chopped dark chocolate and butter in a heatproof bowl over simmering water. Stir in the vanilla extract once melted.
  3. In another bowl, whisk together the caster sugar, demerara sugar, and eggs until fluffy (about 5 minutes).
  4. Sift the flour, cocoa powder, baking powder, and salt together in a third bowl; then mix in the chocolate chips.
  5. Fold the melted chocolate mixture into the egg mixture gently to maintain airiness.
  6. Carefully incorporate the dry ingredients into the wet mixture until just combined.
  7. Scoop tablespoons of batter onto the prepared tray with space between each scoop and bake for 12-14 minutes until crackly on top.
  8. Optionally sprinkle with sea salt before cooling on a rack.
