  • 3 tablespoons butter
  • 1/2 medium onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chicken or vegetable broth
  • 1/2 teaspoon lemon juice and zest from 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook pasta al dente according to package instructions.
  2. In a skillet over medium-high heat, add olive oil and 1 tablespoon of butter. Once hot, sauté onions and mushrooms for about 8-10 minutes until browned.
  3. Stir in remaining butter, garlic, and Dijon mustard. Cook for an additional minute until fragrant.
  4. Add broth, lemon juice, and zest to the skillet; let bubble for one minute.
  5. Remove from heat and stir in parmesan cheese and parsley. Toss with drained pasta (reserve some pasta water if needed) and season with salt and pepper.
