- 1.5 lbs baby potatoes (halved or quartered)
- 4 tablespoons olive oil
- 4 tablespoons butter
- 5–6 cloves garlic (minced)
- 1 teaspoon paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large skillet over medium heat, add 2 tablespoons of olive oil. Add halved or quartered potatoes, season with salt, pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender. Remove from skillet.
- Season the steak cubes with salt, pepper, and Italian herbs. In the same skillet, add 1 tablespoon olive oil and 2 tablespoons butter. Sear steak in batches for 2–3 minutes per side until browned.
- Reduce heat to medium-low; add remaining butter and minced garlic to the skillet. Sauté until fragrant (about 1 minute). Return cooked potatoes to the skillet and toss everything together.
- Heat through for another 1–2 minutes. Garnish with chopped parsley before serving.
