  • ⅓ cup almond flour
  • ¼ cup fresh parsley
  • 2 tsp fresh dill
  • 3 cloves garlic
  • ¼ cup feta cheese
  • 1 cup orzo pasta
  • Juice of 1 lemon
  • 2 cups chicken broth
  • 1 tbsp extra virgin olive oil
  • ⅓ cup crumbled feta cheese
  • Salt to taste

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, chopped parsley, dill, minced garlic, crumbled feta cheese, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix gently to combine.
  2. Form the mixture into meatballs (about 1½ to 2 inches in diameter). Sprinkle lightly with salt.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs for about 3–4 minutes until browned on all sides. Cover and cook for an additional 5–6 minutes until fully cooked.
  4. In the same skillet, bring chicken broth to a boil and add orzo pasta. Cook for approximately 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil into the cooked orzo before serving.
  6. Plate the orzo alongside the meatballs and garnish with extra feta cheese and parsley.
