- 1 tbsp chopped cilantro for sauce
- Cooked rice, quinoa, or cauliflower rice for serving
Instructions
- Marinate shrimp in olive oil, spices, lime juice, salt, and pepper for 15–20 minutes.
- Prepare the corn salsa by mixing corn, bell pepper, green onions, cilantro, lime juice, and salt.
- Mash avocados with lime juice, salt, and pepper until creamy.
- Whisk together mayo (or Greek yogurt), lime juice, hot sauce (if using), garlic powder, smoked paprika, cilantro, and salt for the creamy sauce.
- Grill shrimp over medium-high heat for 2–3 minutes per side until pink.
