  • 1 lb pizza dough
  • 2 small cooked chicken breasts (chopped)
  • 1 cup barbecue sauce (divided)
  • 3 slices cooked bacon (chopped)
  • 2 ½ cups shredded mozzarella cheese
  • ½ cup pineapple tidbits
  • Thinly sliced red onion (to taste)
  • Chopped cilantro (optional)
  • Black pepper

Instructions

  1. Preheat the oven to 450°F. If using a pizza stone, place it in the oven to heat.
  2. In a medium bowl, combine the chopped chicken with ¼ cup of barbecue sauce and set aside.
  3. Roll out the pizza dough into a 12 to 14-inch circle on a pizza pan or peel. Spread the remaining barbecue sauce over the dough and sprinkle with 1 cup of mozzarella cheese.
  4. Top with chicken mixture, chopped bacon, pineapple tidbits, red onion, and finish with the remaining mozzarella cheese and black pepper.
  5. Carefully transfer the pizza to the preheated oven (or onto the pizza stone). Bake for about 10 to 14 minutes until the crust is golden brown.
  6. Allow to cool for about 5 minutes before slicing. Garnish with fresh cilantro if desired.
