- 1 lb pizza dough
- 2 small cooked chicken breasts (chopped)
- 1 cup barbecue sauce (divided)
- 3 slices cooked bacon (chopped)
- 2 ½ cups shredded mozzarella cheese
- ½ cup pineapple tidbits
- Thinly sliced red onion (to taste)
- Chopped cilantro (optional)
- Black pepper
Instructions
- Preheat the oven to 450°F. If using a pizza stone, place it in the oven to heat.
- In a medium bowl, combine the chopped chicken with ¼ cup of barbecue sauce and set aside.
- Roll out the pizza dough into a 12 to 14-inch circle on a pizza pan or peel. Spread the remaining barbecue sauce over the dough and sprinkle with 1 cup of mozzarella cheese.
- Top with chicken mixture, chopped bacon, pineapple tidbits, red onion, and finish with the remaining mozzarella cheese and black pepper.
- Carefully transfer the pizza to the preheated oven (or onto the pizza stone). Bake for about 10 to 14 minutes until the crust is golden brown.
- Allow to cool for about 5 minutes before slicing. Garnish with fresh cilantro if desired.
