  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh grated parmesan cheese
  • Salt and pepper to taste
  • Your choice of pasta (recommended: Barilla protein+)

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Cut salmon into four portions.
  3. In a separate bowl, whisk together milk and cornstarch until smooth.
  4. Melt butter in the heated pan, add garlic, and sauté for 1 minute until fragrant.
  5. Add spinach, cherry tomatoes, and sun-dried tomatoes; cook until spinach is wilted.
  6. Pour in the milk mixture and stir until it thickens slightly.
  7. Cook salmon in the pan for about 4-5 minutes per side or until flaky.
  8. Combine with cooked pasta and season with salt, pepper, and parmesan cheese.
