Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a mixing bowl, whisk together pumpkin puree, maple syrup, Greek yogurt, vegetable oil, egg, and vanilla until smooth.
  3. In another bowl, mix together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  7. Let cool for 5 minutes before transferring to a wire rack to cool completely.
