Ingredients

- 1–2 cloves garlic, minced
- 1/2 cup chopped fresh herbs (parsley, cilantro, mint)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- Juice of 1/2 lemon
- Salt and black pepper to taste
Instructions
- Wash and dry the cucumbers, then dice them into bite-sized pieces.
- In a large mixing bowl, combine diced cucumbers, rinsed chickpeas, sliced red onion, crumbled feta cheese, minced garlic, and chopped herbs.
- In the same bowl, add olive oil, red wine vinegar, lemon juice, salt, and pepper.
