  • 3 large boneless/skinless chicken breasts (about 1 ½ lbs.)
  • ½ cup flour
  • 3 large eggs
  • 5 cups cornflakes
  • ½ cup honey
  • ¼ cup hot sauce
  • 3 tablespoons butter
  • 1 ½ teaspoons paprika
  • ½ teaspoon EACH: salt, chili powder
  • ¼ teaspoon EACH: pepper, cayenne pepper
  • ½ teaspoon EACH: garlic powder, onion powder, mustard powder
  • 3 tablespoons packed brown sugar
  • 2 teaspoons apple cider vinegar
  • Nonstick cooking spray
  • Salt/Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In one bowl, mix flour and seasonings; in another bowl, whisk eggs and hot sauce.
  3. Crush cornflakes and place in a third bowl.
  4. Season chicken breasts with salt and pepper, then coat in flour, dip in egg mixture, and roll in cornflakes.
  5. Place on a nonstick baking sheet and bake for about 15 minutes until golden brown.
  6. For the sauce, melt butter in a saucepan, add honey, hot sauce, and seasonings; simmer for about 5 minutes.
  7. Drizzle the sauce over baked chicken before serving.
