  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup crumbled feta cheese

Instructions

  1. In a mixing bowl, whisk together honey, olive oil, vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes (ideally up to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and discard excess.
  4. Place chicken in a baking dish and top with crumbled feta cheese.
  5. Bake for 25 to 30 minutes until the internal temperature reaches 165°F (75°C). Optional: Broil for extra color for the last few minutes.
