Ingredients

  • 1 lb chicken breast (diced)
  • 2 cups chicken broth
  • 1 cup jasmine rice
  • 1 packet taco seasoning
  • 1 can black beans (drained)
  • 1 cup frozen corn
  • 1 cup salsa

Instructions

  1. Layer the diced chicken in the Instant Pot and pour in the broth.
  2. Add rinsed jasmine rice evenly on top of the broth.
  3. Sprinkle taco seasoning over the rice.
  4. Pour salsa on top of the rice; add black beans and corn without stirring.
  5. Close the lid, set to sealing, and pressure cook on high for 4 minutes.
  6. Let pressure release naturally for 10 minutes before releasing remaining pressure.
  7. Fluff rice with a fork, mix ingredients gently, and adjust seasoning as needed.
