  • 2 cups pepper jack cheese (shredded)
  • 4 ounces cream cheese (softened)
  • 2 jalapeños (seeds removed and diced)
  • ½ cup green onion (diced)
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup buttermilk
  • 2 cups breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine pepper jack cheese, cream cheese, diced jalapeños, and green onions until mixed well.
  2. Roll the mixture into one-inch balls and place on a foil-lined baking sheet.
  3. Refrigerate the balls to firm up while setting up your dredging station: one container with flour, another with whisked egg and buttermilk, and a third with seasoned breadcrumbs.
  4. Dredge each ball in flour, dip in the egg mixture, then coat in breadcrumbs. For extra crunch, repeat the egg and breadcrumb steps.
  5. Heat vegetable oil in a frying pan over medium heat until hot. Fry 4 to 6 balls at a time until golden brown on all sides.
  6. Remove from oil and drain on paper towels before serving.
