Ingredients
- 4 large baking potatoes
- 9 oz cooked & chopped bacon
- 5.3 oz grated cheddar cheese
- 5.3 oz cream cheese
- 3 fresh jalapeños (deseeded & diced)
- 2 tbsp butter
- Garlic powder, salt & black pepper to taste
Instructions
- Preheat the oven to 356°F (180°C). Poke holes in the potatoes, coat with olive oil, and sprinkle with salt and pepper. Bake for 60-70 minutes until fork-tender.
- Allow potatoes to cool slightly; cut off the tops and scoop out the flesh while leaving a thin shell.
- In a bowl, mix the scooped potato with cream cheese, garlic powder, butter, seasonings, most of the cheddar cheese, bacon bits, and jalapeños.
- Fill each potato skin with the mixture and top with remaining cheese, bacon bits, and jalapeños.
- Return to oven at 430°F (220°C) for about 15 minutes until crispy.
