  • 4 large baking potatoes
  • 9 oz cooked & chopped bacon
  • 5.3 oz grated cheddar cheese
  • 5.3 oz cream cheese
  • 3 fresh jalapeños (deseeded & diced)
  • 2 tbsp butter
  • Garlic powder, salt & black pepper to taste

Instructions

  1. Preheat the oven to 356°F (180°C). Poke holes in the potatoes, coat with olive oil, and sprinkle with salt and pepper. Bake for 60-70 minutes until fork-tender.
  2. Allow potatoes to cool slightly; cut off the tops and scoop out the flesh while leaving a thin shell.
  3. In a bowl, mix the scooped potato with cream cheese, garlic powder, butter, seasonings, most of the cheddar cheese, bacon bits, and jalapeños.
  4. Fill each potato skin with the mixture and top with remaining cheese, bacon bits, and jalapeños.
  5. Return to oven at 430°F (220°C) for about 15 minutes until crispy.
