Ingredients
- 12 whole graham crackers
- 2 tablespoons granulated sugar
- 8 tablespoons butter (melted)
- 1 box (3.4 oz) instant lemon pudding
- 1½ cups half and half
- 8 ounces cream cheese (softened)
- ½ cup powdered sugar
- 16 ounces Cool Whip (thawed)
- 1 can (21 oz) blueberry pie filling
Instructions
- In a food processor, blend graham crackers and sugar into fine crumbs. Add melted butter and mix until well-coated.
- Press the mixture into a greased 9×13 baking pan and freeze for 20 minutes.
- In a medium bowl, whisk together lemon pudding and half & half until thickened; let sit for 5 minutes.
- In a larger bowl, beat cream cheese and powdered sugar until smooth; fold in the pudding mixture and then Cool Whip until combined.
- Spread the lemon layer over the crust, top with blueberry pie filling, then add remaining Cool Whip on top.
- Cover with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
