  • 1 cup dried red kidney beans (soaked overnight)
  • 1 tablespoon oil
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 teaspoon fresh thyme
  • 3 cloves garlic (chopped)
  • 1 teaspoon apple cider vinegar (optional)
  • ½ teaspoon black pepper (or to taste)
  • Salt to taste
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot; add sliced vegan sausages and brown.
  2. Sauté onion, celery, and bell pepper until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, garlic, and bay leaves.
  4. Drain soaked beans and add to pot; season with black pepper.
  5. Cover and simmer for 1 to 1½ hours until beans are tender.
  6. Cook rice as directed on package while stew simmers.
  7. Mash some beans against the pot side to thicken the stew.
  8. Serve warm over rice or in tacos.
