  • 6 boneless, skinless chicken breasts
  • 5 slices of bacon, diced
  • 1/4 cup jalapeno slices, diced
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 oz bag of crushed pork skins

Instructions

  1. Preheat oven to 425°F.
  2. Place chicken breasts in a casserole dish and bake for 30-40 minutes until juices run clear.
  3. While chicken bakes, fry diced bacon until crispy; set aside.
  4. Sauté diced onion in remaining bacon fat until tender.
  5. In a mixing bowl, combine bacon, onions, jalapenos, cream cheese, mayonnaise, cheddar cheese, and Parmesan; mix well.
  6. Once chicken is done baking, reduce oven temperature to 350°F and spread the topping mixture over each breast.
  7. Bake uncovered for an additional 15 minutes until bubbly.
  8. For added crunch, sprinkle crushed pork skins mixed with melted butter and Parmesan over the top; broil for a couple of minutes until browned.
