  • 1 medium onion (finely chopped)
  • 2 large eggs
  • 3 garlic cloves (minced)
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 3/4 cup ketchup for the glaze
  • 1½ tsp white vinegar for the glaze
  • 2 Tbsp brown sugar for the glaze

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Sauté the chopped onion in olive oil until softened; allow to cool.
  3. In a mixing bowl, combine ground beef, sautéed onions, eggs, garlic, breadcrumbs, milk, salt, Italian seasoning, and pepper. Mix gently until combined.
  4. Shape the mixture into a loaf on the baking sheet.
  5. Bake uncovered for 40 minutes.
  6. Prepare the glaze by combining ketchup, vinegar, brown sugar, garlic powder, and onion powder in a small bowl.
  7. After the initial baking time, spread the glaze over the meatloaf and bake for an additional 20 minutes or until internal temperature reaches 160°F.
  8. Let it rest for 10–15 minutes before slicing.
