Description

  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 pkg (8 oz.) cream cheese, softened
  • 1/4 cup sugar (for topping)
  • Assorted fresh fruit (for topping)

Instructions

  1. In a stand mixer bowl, cream together the softened butter and sugar for about 2 minutes. Add the whole egg, egg yolk, and vanilla extract; mix until well blended.
  2. In a separate bowl, sift together the flour, salt, and baking powder. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  3. Wrap the dough in plastic wrap and chill in the refrigerator for at least one hour.
  4. Preheat your oven to 350°F (175°C). Roll out chilled dough to about 1/2 inch thick and cut into desired shapes using cookie cutters. Place on parchment-lined baking sheets.
  5. Bake for 9-10 minutes or until set and lightly browned at the edges. Allow cookies to cool completely.
  6. In a mixing bowl, beat together softened cream cheese, sugar, and vanilla extract until smooth. Spread over cooled cookies and top with fresh fruit.
