  • 125 ml cream (for jelly)
  • 12 Tiramisu sponge fingers
  • 1/2 cup port, sherry, or juice
  • 1.5 cups custard
  • 400 grams mixed berries
  • 200 ml thickened cream (for topping)
  • Mint leaves for garnish

Instructions

  1. Prepare jelly according to package instructions and chill.
  2. Layer 1.25 cups of jelly into dessert dishes and refrigerate.
  3. Once setting, mix remaining jelly with cream; pour over the jelly layer.
  4. Soak sponge fingers in port or juice; layer on top of flummery.
  5. Add custard and berries; reserve some for decoration.
  6. Whip thickened cream until stiff peaks form; pipe onto trifles.
  7. Garnish with berries and mint leaves.
