- 6 chicken thighs (bone-in, skin optional)
- 1/2 lemon (juiced)
- 1/4 cup chicken stock

- 1 1/2 tablespoons turmeric
- 1 tablespoon cumin
- 1/2 tablespoon dried coriander
- 1 1/2 tablespoons oregano
- 10 garlic cloves (crushed)
- Salt and pepper to taste
- 2 cups basmati rice
- 3 1/2 cups chicken stock
- 1 onion (finely chopped)
Instructions
- Marinate chicken in lemon juice, spices, garlic, salt, and pepper for at least one hour.
- Preheat oven to 350°F.
- Brown the marinated chicken in olive oil over medium heat for about ten minutes.
- Cook onions and garlic in the same skillet until softened.
- Add basmati rice and stir to coat before pouring in chicken stock.
