Ingredients

  • 6 chicken thighs (bone-in, skin optional)
  • 1/2 lemon (juiced)
  • 1/4 cup chicken stock
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons turmeric
  • 1 tablespoon cumin
  • 1/2 tablespoon dried coriander
  • 1 1/2 tablespoons oregano
  • 10 garlic cloves (crushed)
  • Salt and pepper to taste
  • 2 cups basmati rice
  • 3 1/2 cups chicken stock
  • 1 onion (finely chopped)

Instructions

  1. Marinate chicken in lemon juice, spices, garlic, salt, and pepper for at least one hour.
  2. Preheat oven to 350°F.
  3. Brown the marinated chicken in olive oil over medium heat for about ten minutes.
  4. Cook onions and garlic in the same skillet until softened.
  5. Add basmati rice and stir to coat before pouring in chicken stock.
  6. Place browned chicken on top of the rice mixture, cover, and bake for 20 minutes.
  7. Fluff rice before serving with lime wedges, Greek yogurt, and fresh coriander.
