  • 10 oz. mushrooms (button or baby bella)
  • 2 large boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 tablespoons salted butter
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1/3 cup heavy cream
  • Seasonings: salt, pepper, soy sauce, onion powder, mustard powder, dried thyme, garlic

Instructions

  1. Clean and slice the mushrooms; season chicken with salt and pepper and dredge in flour.
  2. In a large skillet over medium heat, melt butter and sauté mushrooms until browned (5–7 minutes).
  3. Push mushrooms aside, add olive oil, and brown chicken for 6–8 minutes per side.
  4. Add beef broth, bouillon cube, soy sauce, onion powder, mustard powder, thyme, white wine, and garlic; simmer.
  5. Mix cornstarch with water until smooth; stir into sauce until thickened.
  6. Reduce heat to low and stir in heavy cream before serving over rice or mashed potatoes.
