Ingredients
- 2 lbs pot roast
- 2 russet potatoes, chopped
- 1 bag frozen seasoning blend
- 1 bag frozen peas
- 1 bag frozen green beans
- 1 bag frozen corn
- 4 large carrots, chopped
- 32 oz beef broth
- 21.5 oz tomato soup (2 cans)
- Salt and pepper
Instructions
- Season the pot roast with salt and pepper and place it in a slow cooker with half a can of beef broth. Cook on LOW for about 10 hours until tender and shred.
- In a large pot, heat oil over medium heat. Sauté chopped carrots and frozen seasoning blend until tender.
- Stir in shredded beef, chopped potatoes, remaining vegetables, beef broth, tomato soup, water, salt, and pepper.
- Bring to a boil then reduce heat to simmer for about an hour while stirring occasionally.
