Ingredients

  • 2 lbs pot roast
  • 2 russet potatoes, chopped
  • 1 bag frozen seasoning blend
  • 1 bag frozen peas
  • 1 bag frozen green beans
  • 1 bag frozen corn
  • 4 large carrots, chopped
  • 32 oz beef broth
  • 21.5 oz tomato soup (2 cans)
  • Salt and pepper

Instructions

  1. Season the pot roast with salt and pepper and place it in a slow cooker with half a can of beef broth. Cook on LOW for about 10 hours until tender and shred.
  2. In a large pot, heat oil over medium heat. Sauté chopped carrots and frozen seasoning blend until tender.
  3. Stir in shredded beef, chopped potatoes, remaining vegetables, beef broth, tomato soup, water, salt, and pepper.
  4. Bring to a boil then reduce heat to simmer for about an hour while stirring occasionally.
