- 2 1/2 cups unsalted butter (room temperature)
- 4 cups powdered sugar
- 2 tbsp heavy cream
- 2 tsp vanilla extract
- 1 tsp vanilla bean paste
- 1 cup white chocolate chips
- 1/4 cup + 3 tbsp heavy cream

Instructions
- Preheat oven to 350°F (180°C) and line three 8-inch cake pans with parchment paper.
- Cook quick oats in boiling water, cover, and let sit for 20 minutes until cool.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg; set aside.
- Beat butter and sugars until fluffy; add eggs, sour cream, and vanilla until well combined.
- Fold in oats and dry ingredients gently until just mixed.
- Divide batter among pans and bake for 20–22 minutes; cool before removing from pans.
- Prepare buttercream by beating butter with powdered sugar; mix in heavy cream and vanilla extracts.
- Assemble the cake by layering frosting between cooled cakes; frost the top and sides.
- Make glaze by melting heavy cream with white chocolate chips; pour over the frosted cake.
