- 2 cups Heavy Cream
- 1/2 cup Unsalted Butter
- 1 teaspoon Vanilla Extract
- 6 cups Sugar (divided)
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Chopped Walnuts or Pecans
Instructions
- Grease a 9×13-inch baking dish and set aside.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently for about 20 minutes until fully liquefied.
- In a large saucepan, combine the remaining 4 cups of sugar and heavy cream. Simmer on low until well combined.
- Pour the melted sugar into the cream mixture while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat, stir in baking soda, butter, and vanilla until smooth.
- Let the mixture rest for around 20 minutes before mixing in chopped nuts.
- Transfer to the greased baking dish and allow to cool completely before slicing into squares.
