Ingredients

  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 6 cups Sugar (divided)
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Chopped Walnuts or Pecans

Instructions

  1. Grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently for about 20 minutes until fully liquefied.
  3. In a large saucepan, combine the remaining 4 cups of sugar and heavy cream. Simmer on low until well combined.
  4. Pour the melted sugar into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat, stir in baking soda, butter, and vanilla until smooth.
  7. Let the mixture rest for around 20 minutes before mixing in chopped nuts.
  8. Transfer to the greased baking dish and allow to cool completely before slicing into squares.
