- 2 cups Heavy Cream
- 6 cups Sugar (divided)
- 1/2 cup Unsalted Butter
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Walnuts or Pecans (chopped)
Instructions
- Lightly grease a 9×13-inch baking dish; set aside.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently until fully liquefied.
- In a large saucepan, combine remaining sugar and heavy cream; simmer on low heat.
- Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat; stir in baking soda until incorporated.
- Add unsalted butter and vanilla extract; stir until smooth.
- Allow to rest for about 20 minutes before stirring in chopped nuts and transferring to the prepared baking dish.
- Cool for at least 1-2 hours before slicing into squares.
