  • 2 cups Heavy Cream
  • 6 cups Sugar (divided)
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)

Instructions

  1. Lightly grease a 9×13-inch baking dish; set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes, stirring frequently until fully liquefied.
  3. In a large saucepan, combine remaining sugar and heavy cream; simmer on low heat.
  4. Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat; stir in baking soda until incorporated.
  7. Add unsalted butter and vanilla extract; stir until smooth.
  8. Allow to rest for about 20 minutes before stirring in chopped nuts and transferring to the prepared baking dish.
  9. Cool for at least 1-2 hours before slicing into squares.
