  • 1 large salmon fillet (or 4 6-ounce salmon fillets)
  • 2 bell peppers, chopped
  • ½ white or red onion, chopped
  • 1 cup chopped or sliced carrots
  • 2 cups broccoli florets
  • 2 tablespoons oil
  • 1 ½ cups of your favorite teriyaki sauce
  • 1 cup water
  • ¼ cup soy sauce
  • 2 teaspoons minced garlic
  • ¼ teaspoon ground ginger
  • ¼ cup packed brown sugar
  • 2 tablespoons honey
  • ¼ cup cold water + 2 tablespoons corn starch
  • 2 teaspoons sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the bell peppers, onion, carrots, and broccoli. Place them on a baking sheet and drizzle with oil, salt, and pepper; toss to coat.
  3. Position the salmon on top of the vegetables and season lightly.
  4. In a bowl, whisk together teriyaki sauce, soy sauce, garlic, brown sugar, and water until smooth. Pour over the salmon and veggies.
  5. Bake for about 20 minutes or until the salmon flakes easily with a fork.
