  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp olive oil (or avocado oil)
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine)
  • 2 garlic cloves, minced
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Italian seasoning, Dijon mustard, salt, and pepper to create the sauce.
  3. In another bowl, combine halved grape tomatoes and mozzarella balls; season with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper; sear for 1-2 minutes per side until golden.
  5. Pour the prepared balsamic sauce over the chicken and bring to a simmer.
  6. Remove from heat and top with tomato and mozzarella mixture.
  7. Bake uncovered for 18-23 minutes or until chicken reaches an internal temperature of 165°F (75°C). Let rest before serving.
