  • 20 frozen chicken and vegetable or pork and vegetable dumplings
  • 5 cups chopped bok choy
  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons red curry paste
  • 1/2 cup full-fat coconut milk or cream
  • 1/2 cup water
  • 3 tablespoons chopped cilantro
  • 1/4 cup thinly sliced green onion
  • 2 teaspoons toasted sesame seeds
  • Chili crunch oil (optional)

Instructions

  1. In a mixing bowl, whisk together garlic, ginger, soy sauce, rice vinegar, sesame oil, red curry paste, coconut milk, and water until smooth.
  2. Heat oil in a large skillet over medium heat and sauté chopped bok choy for 3-5 minutes until wilted.
  3. Place frozen dumplings on top of bok choy.
  4. Pour sauce over dumplings and bok choy evenly.
  5. Cover and simmer for 10-15 minutes until dumplings are cooked through.
  6. Serve garnished with cilantro, green onions, sesame seeds, and optional chili crunch oil.
