  • 1 Tbsp olive oil
  • 23 garlic cloves
  • 9oz (250g) baby spinach
  • 5oz (140g) cream cheese
  • 1oz (30g) grated parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente; reserve 1/2 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic for 1-2 minutes until fragrant.
  3. Add spinach in batches, seasoning with salt until wilted.
  4. Stir in cream cheese and reserved pasta water; add parmesan and mix well.
  5. Combine cooked pasta with the sauce in the skillet; toss until coated.
  6. Serve immediately with black pepper and extra parmesan.
