  • 1/2 cup brown sugar, packed

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture to form a smooth dough.
  6. Scoop out two tablespoons of dough; flatten into discs on the prepared baking sheet.
  7. Add about one teaspoon of jelly in the center of each disc.
  8. Cover with another disc of dough; seal edges by pressing down with a fork for decoration.
  9. Bake for 12–15 minutes or until edges are golden brown. Allow cooling on the baking sheet for five minutes before transferring to a wire rack.
