  • 1 (8-ounce) container Tofutti dairy-free cream cheese (softened)
  • 12 tablespoons light agave nectar
  • 1 ½ teaspoons pure vanilla extract
  • 2 cups fresh peaches (sliced)
  • ½ cup fresh blueberries

Instructions

  1. Thaw the puff pastry at room temperature for 30-40 minutes and soften the cream cheese.
  2. Preheat your oven to 400ºF and line a baking sheet with parchment paper.
  3. In a bowl, mix the cream cheese, agave nectar, and vanilla until smooth.
  4. Roll out the thawed puff pastry into a rectangle (about 13”x9”) on a floured surface. Create a border around the edges without cutting through.
  5. Prick the center of the pastry with a fork, brush with melted vegan butter, and sprinkle with sugar.
  6. Spread the cream cheese mixture in the center, top with peach slices and blueberries.
