  • 1 tablespoon oil (avocado or olive oil)
  • 2 garlic cloves (minced)
  • 1 2-inch knob fresh ginger root (grated or minced)
  • 1 cup uncooked white rice (Jasmine or Basmati)
  • 2 cups fresh or frozen pineapple (chopped)
  • 1 tablespoon sriracha
  • 1 tablespoon coconut aminos (or soy sauce)
  • 1 teaspoon coconut sugar
  • 1 teaspoon salt
  • ¼ teaspoon red chile flakes
  • 1½ cups water

Instructions

  1. Heat oil in a saucepan over medium heat; add minced garlic and grated ginger.
  2. Sauté for about 5 minutes until fragrant.
  3. Stir in uncooked rice and toast for another 2 minutes.
  4. Add chopped pineapple, sriracha, coconut aminos, coconut sugar, salt, and red chile flakes; stir well.
  5. Pour in the water and bring to a boil.
  6. Reduce heat to medium-low, cover, and simmer for about 15 minutes until water evaporates.
  7. Let the rice rest covered for an additional 5 minutes before fluffing with a fork.
