Description

  • 2/3 cup packed brown sugar
  • 1 stick butter
  • 78 maraschino cherries (halved)
  • 1 large can of drained pineapple slices
  • 4 oz unsweetened apple sauce
  • 1/4 cup vegetable oil
  • 1 cup pineapple juice
  • 3 eggs
  • 1 box yellow cake mix

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the yellow cake mix, eggs, pineapple juice, vegetable oil, and apple sauce until smooth.
  3. Line two round cake pans with parchment paper and spray with baking spray.
  4. Melt butter in a pan over medium heat; add brown sugar and stir until bubbling. Pour evenly into the prepared pans.
  5. Arrange pineapple slices on top of the sugar mixture and place cherry halves in the center of each slice.
  6. Divide the batter between the pans and bake for 28-30 minutes or until a toothpick comes out clean.
  7. Cool for a few minutes before inverting onto plates.
