Ingredients

  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 2 1/4 cups granulated sugar
  • 6 large eggs
  • Juice of 3 lemons
  • 1/2 pint fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9" x 13" baking pan by greasing it and lining it with parchment paper.
  2. Blend raspberries with 1 tablespoon of water until smooth, then strain to remove seeds.
  3. In a bowl, mix butter, flour, salt, and sugar until smooth; press into the bottom of the pan and bake for 15-20 minutes until golden.
  4. Combine sugar and flour in another bowl; whisk in eggs and lemon juice. Gradually stir in raspberry puree until light pink.
  5. Pour filling over baked crust and return to oven for an additional 25-30 minutes until edges are set but center is slightly wobbly.
  6. Cool completely before slicing into squares.
