  • 1 ⅓ cup oat flour
  • 1 cup pumpkin puree
  • ⅓ cup Greek yogurt
  • 2 large eggs
  • ⅔ cup vanilla flavored protein powder
  • ⅔ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ⅔ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper and spray with cooking spray.
  2. In a mixing bowl, combine the oat flour, pumpkin puree, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda. Mix until just combined.
  3. Gently fold in dark chocolate chips, reserving some for the top.
  4. Pour the batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  5. Bake for 35-45 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool slightly before slicing.
